Bat-Nat

The Bat-Nat is a Pétillant Naturel made from the variety Schwarzriesling, also known as Pinot Meunier. The grapes are pressed directly—just long enough to lend the wine a delicate splash of color—then bottled with 9 g/l of residual sugar to finish fermentation in the bottle. We disgorge by hand, warmly and gently, the following spring.

The vineyard lies within the town, surrounded by a surprising haven of biodiversity: a habitat that supports fifteen different species of bats. When we discovered this, we built a small project around it—and ever since, we’ve been receiving and collecting guano for our compost work.
