The Bat-Nat is a Pétillant Natural made of the variety Schwarzriesling, also known under the name Pinot Meunier. Pressed directly but long enough to just give it a splash of color we bottle it with 9 g/l sugar left to finish fermenting in the bottle. We warmly disgorge by hand the following spring.
The vineyard is surrounded by the town, a habitat of nature providing 15 different species of bats space to hunt. When we learned about that we built a little project around it and since then have been receiving and collecting guano for our compost work. There is a documentary about it if you want to learn more.
