Bat-Nat

Bat-Nat is a Pétillant Naturel made from Schwarzriesling (Pinot Meunier) grown in the same vineyard as the Fledermaus. The grapes are pressed directly, just long enough for the wine to take on a delicate color. Bottled at around 9 g/l of residual sugar to complete fermentation in the bottle, the wine is then disgorged by hand – gently and warm – the following spring.

The vineyard sits in the middle of the village, surrounded by a remarkably biodiverse habitat that is home to at least fifteen bat species. This discovery prompted a small on-site project: we now collect bat guano and use it as part of our composting work in the vineyards.
