Probably our most iconic wine, the Fledermaus (German for “bat”), is a single vineyard wine made of the variety Schwarzriesling, also known under the name Pinot Meunier. From the beginning on it was always the idea to neither make it classic red nor sparkling white but let it go through a carbonic maceration for the glou-glou style we love.
The vineyard is surrounded by the town, a habitat of nature providing 15 different species of bats space to hunt. When we learned about that we built a little project around it and since then have been receiving and collecting guano for our compost work. There is a documentary about it if you want to learn more.
