Wilde Meute
The Wilde Meute (which translates to “wild pack”) is our skin-contact blend. The defining varieties are Bacchus and Silvaner, along with whatever else we find suitable for the finishing touch. Bacchus—an aromatic crossing of Silvaner and Riesling—is destemmed and left on the skins for about a week. It typically finishes fermentation in stainless steel, where it rests on the full lees for the next ten months before being racked and blended with the Silvaner, which is vinified in the same way.
From there, they continue their journey together in stainless steel, spending another winter in the cellar before finally being bottled.
