Wilde Meute
Wilde Meute is our skin-contact blend. The core varieties are Bacchus and Silvaner, complemented by small additional lots selected for balance and expression. Bacchus, an aromatic crossing of Silvaner and Riesling, is destemmed and fermented on the skins for about a week. Fermentation typically finishes in stainless steel, where the wine remains on the full lees before being racked and blended with the Silvaner, which is vinified in the same way.
After blending, the wine continues its aging in stainless steel, spending at least eighteen months in the cellar in total before being bottled.
