Siebenschläfer

Der Siebenschläfer comes from the first vineyard we planted ourselves. It is a traditional field blend known locally as Frentsch, a planting style that shaped the region for centuries before single-variety vineyards became the norm.

Co-planted in the vineyard are green, yellow and blue Silvaner, Bukettsilvaner, Heunisch, Gewürztraminer, red and yellow Muskateller, Riesling, Weißburgunder, Grauburgunder and Spätburgunder, as well as Vogelfränkisch, Adelfränkisch, Lagler, Kleinberger and Elbling.

All grapes are harvested together, destemmed and fermented on the skins for about a week. Fermentation finishes in old oak barrels, where the wine remains until the following summer before being racked to tank for another six months.

The diversity of varieties results in a highly distinctive and complex wine, showing a light color from the red-skinned grapes, muscat-driven aromatics, gentle red berry fruit and a mineral Silvaner backbone.
