Fledermaus

Fledermaus – probably our most iconic wine – is a single-vineyard Schwarzriesling (Pinot Meunier). From the very beginning, the intention was neither to make a classic red wine nor a sparkling base, but to explore light-extraction styles that emphasize freshness, drinkability and juiciness.
The 2023 vintage was vinified in a trempette style: whole clusters, minimal extraction and a short, gentle maceration inspired by Beaujolais and the Jura. The result is a bright, juicy wine with low tannins, vivid fruit and high drinkability rather than structure or power.

The vineyard is embedded within the town and surrounded by small-scale habitats that serve as hunting grounds for at least 15 different bat species. After learning about this, we started a small on-site project and have since been collecting bat guano, which is used as part of our compost work in the vineyards.
