
How we made it
The top three planted varieties in Franken are Bacchus, Müller-Thurgau and Silvaner. Kind of logical playing with a blend. Despite the severe damage caused by powdery mildew in 2021 we were able to pick enough of our aromatic Bacchus grapes – a variety we are depending on just one vineyard – plus enough of the other two varieties to complete the intended mix. Everything was destemmed, lightly crushed and stayed on skins just until the fermentation temperature had peaked to maintain a slightly fruity flavor profile. The Müller-Thurgau finished fermentation in a tank, Silvaner and Bacchus in big barrels. Shortly before bottling the wines were racked the first time and blended.
