2019 Bacchus Pet-Nat

How we made it

Even in a bad year for Bacchus (with sunburn / heat damage massively reducing the yields) we couldn’t resist to produce at least a small batch of this Pet-Nat. A good quarter of the grapes were fermented on the skins for about a week, the rest pressed directly. Bottled a few weeks later in October it took a little longer than usual for this Pet-Nat to get where we wanted it to be so we didn’t disgorge it before August 2020. As always warm and by hand.
