How we made it
Due to a disastrous Regent harvest in our own vineyard due to a drosophilia suzukii attack we decided to buy (biodynamically farmed) Regent grapes from a colleague in 2017. The grapes were picked in September, destemmed but the berries not crushed to get a bit of a carbonic effect. After a week the must was pressed and the juice kept fermenting in a big 2400l barrel which was topped up with Domina from a previous vintage. Racked and bottled in July 2018.
