How we made it
The grapes for this cuvée grow on a fairly steep plot close to the winery on young shell-limestone. The tope and the bottom of the vineyard are a bit fatter, the middle section is dry and rocky. Vines are about 30 years old and have been farmed organically for almost 20 years.
The 4th vintage of our beloved Heimat Silvaner was harvested in the end of September. The must of theses grapes has always been fermenting like a well oiled machine but the last warm days of September increased the speed. Fermentation was over before a week had passed. While the crushed berries were fermenting a part of the stems was drying in the sun and added back in a few days before pressing. The total skin-contact time was about two weeks.
After pressing the wine went into the same barriques that were used previously with part of it going to a tank.
